Bruce's Sweet Potato Crab and Cheddar Fritters

  1. Combine Bruce's Sweet Potato Pancake Mix, eggs, milk, baking powder, salt, and hot sauce.
  2. Mix until smooth, fold in crabmeat and cheese.
  3. Drop spoonfuls of batter into the deep fat fryer, cook until golden brown.
  4. Remove fritters from oil and drain on paper towels, serve immediatly.
Yield: 10 - 12 cakes
Preptime: 15 minutes
