Cajun Pasta

Ingredients

  • 1 lb  Wagon Wheel Pasta
  • 1 lb  Andouille Sausage
  • 4 each  Boneless, Skinless Chicken Breast, cubed
  • 1 medium  Red Onion, chopped
  • 1 medium  Green Bell Pepper, seeded and chopped
  • 1 tbsp  Chopped Garlic
  • 1 15 oz  Can Tomato Sauce
  • 1 16 oz  Can Whole Tomatoes, coarsley chopped
  • 1 tbsp  Lousiana Gold Pepper Sauce
  • 1/2 tbsp  Cajun Shake
  • 2 tbsp  Chopped Fresh Parsley for garnish

Directions

  1. Cook pasta according to package instructions.
  2. While pasta is cooking heat a large nonstick skillet over medium high heat. Add sausage and chicken and saute about 5 minutes or until chciken is no longer pink.
  3. Add onion, bell pepper, and garlic cook 3 to 5 minutes or until soft.
  4. Next add tomato sauce and tomatoes and cook 15 to 20 minutes. Season with hot sauce and Cajun Shake.
  5. Drain pasta and transfer to a serving bowl, then pour sauce over pasta and mix well.
  6. Garnish with parsley.
Yield: 6 servings

Cook time: 30 to 40 minutes
