Venison Medallions with Sweet Creole Mustard

  1. For Meat:
  2. Grill medallions over medium heat appx. 3-4 minutes. on each side.
  3. For Sweet Mustard Cream Sauce:
  4. Bring cream to a boil over high heat.
  5. Reduce heat to medium-low and simmer, uncovered, for 35-60 minutes or until cream is reduced to 1cup, stirring often.
  6. Remove from heat.
  7. Add mustard and honey, stir until smooth.
Yield: 2-3 servings
Preptime: 10 minutes
Cook time: 1 hour
