Grilled Duck Breast Salad with Marmalade Vinagrette Dressing

Directions

  1. Inject 3/4 oz. of marinade into each duck breast.
  2. Coat with Cajun Shake to taste.
  3. Grill duck breast for 3-4 minutes per side.
  4. Place red peppers in a saucepan over medium heat.
  5. Add in marmalade, vinegar, honey and wine.
  6. Stir and let cook for 8-10 minutes.
  7. Place duck breast over salad ingredients of choice and pour on vinaigrette dressing.
