Grilled Duck Breast Salad with Marmalade Vinagrette Dressing

Ingredients
- 4 ea Duck Breast
- 1 jar Cajun Injector Creole Garlic Marinade
- 1 tbsp Cajun Shake
- 1 cup Red Wine Vinegar
- 1 cup Orange Marmalade
- 1 cup Honey
- 1 cup White Wine
- 1/2 cup Chopped Red Peppers
Directions
- Inject 3/4 oz. of marinade into each duck breast.
- Coat with Cajun Shake to taste.
- Grill duck breast for 3-4 minutes per side.
- Place red peppers in a saucepan over medium heat.
- Add in marmalade, vinegar, honey and wine.
- Stir and let cook for 8-10 minutes.
- Place duck breast over salad ingredients of choice and pour on vinaigrette dressing.
Preptime: 15 minutes
Cook time: 12minutes
