Creole Garlic Elk Roast

Directions

  1. Melt butter in mixing bowl and add marinade.
  2. Inject Elk roast approximately 2 ounces per pound and sprinkle in a light coat of Cajun Shake.
  3. Place in the smoker for about 4 hours.
  4. Preheat smoker to 225 F.
Yield: 8-10 servings
