Southwest Buffalo Burgers

Ingredients

  • 3 lbs  Ground Buffalo
  • 1 lb  ground Pork
  • 2 cups  Italian bread crumbs
  • 2 lg  Eggs
  • 2/3 cup  Mesquite Cajun Injector BBQ
  • 1 1/2 tbsp  Cajun Shake
  • 2 tsp  Garlic Powder
  • 1 8 oz jar  Casa Fiesta Whole Jalapenos
  • 1 pkg  Cajun Injector Chicken Fry Mix
  • 1 cup  Cajun Injector Cottonseed Oil
  • 8 slices  Pepper Jack Cheese
  • 1 pkg  Hamburger buns

Directions

  1. Drain the Jalapenos and cut into lengthwise strips and pat dry with a paper towel.
  2. Batter according to the directions on the Cajun Injector Chicken Fry Mix and fry in Cajun Injector Cottonseed Oil at 350 degrees F. until golden brown.
  3. Remove and set aside.
  4. To serve, place a slice of Pepper Jack Cheese on the burger and top with fried Jalapeno strips.
  5. In a large mixing bowl, combine the first 7 ingredients and mix by hand until thoroughly combined.
  6. Portion meat into burgers and cook on a charcoal or gas grill.
Yield: 8 burgers
